Restaurant ONE,

The old factory building stood empty for over forty years. Graffiti from this period can still be seen on
the walls, but otherwise the huge space has been transformed into an elegantly designed restaurant.
This is where Executive Chef Edwin Soumang cultivates his “new Dutch cuisine”. His wife Bethany
DeLong is the restaurant host and provides the perfect wine for each dish as sommelier. In summer,
diners can enjoy an aperitif on the idyllic terrace, which overlooks the river and the restaurant’s
own herb and vegetable garden. Anyone who would like a front-row view of Edwin and his team
at work can sit at the Chef’s Table in the kitchen instead of the main restaurant. This is the perfect
place to experience the culinary skill which has deservedly held a Michelin star since 2010.
